14oz. cabbage, shredded (about 1lb)
1 teaspoon salt
2 tablespoons sugar
2 cobs of corn, cut away from the cob (about 1 cup if using frozen)
1 red pepper, thinly sliced and seeded
1/2 small red onion, finely diced
1 tablespoon maple syrup or honey
1/4 cup rice vinegar
1 tablespoon SMAK DAB Mustard (any one will do!)
1-2 teaspoon hot sauce
1/4 cup finely chopped cilantro


Place cabbage in a glass bowl and sprinkle with salt and sugar. Cover with plastic wrap and microwave for 60 seconds, then another 30 seconds. Drain liquid released from the cabbage and spin cabbage dry in a salad spinner. Toss cabbage with corn, pepper, and onion. Whisk together maple syrup (or honey), vinegar, mustard, and hot sauce; pour over cabbage mixture. Cover and chill until ready to serve. Prior to serving, sprinkle with cilantro and freshly ground pepper.
