4 ears of corn, husks removed
1/4 unsalted butter, softened
1 tablespoon SMAK DAB Mustard (Maple, Honey Horseradish, or Beer Chipotle)
1 tablespoon maple syrup
1/2 teaspoon dry mustard
2 teaspoons thyme, finely chopped
Pinch of sea salt + pepper
Mix together butter, mustards, maple syrup, thyme, salt, and pepper. Bring a big pot of water to a boil, and boil the corn until just tender; 3 minutes. Remove from water and allow to rest, this will allow some of the water to evaporate from the corn. Slather each cob with at least 1 tablespoon of the butter. Serve immediately!
Note: The corn can be cooked ahead (even the night before), cooled down, and grilled to reheat. You will get a nice char from the grill for delicious BBQ flavor! Just lightly brush each cob with olive oil before grilling on medium heat. Experiment with this recipe using different sweeteners such as honey or agave syrup, or herbs such as cilantro or dill! Any leftover butter can be spooned over your fresh vegetables or potatoes. Yum!!
